Souvlakihut is an innovative quick service restaurant in Australia that specialises in fresh and flavoursome souvlakis. Founded by John and Bill Fotiadis in the Melbourne suburb of Hillside in 2004, the company has grown to 36 franchises in just five years. Currently located along the Eastern Seaboard, Souvlakihut has plans to expand domestically and internationally, with a target of 50 stores by the end of 2010 and 120 stores by 2014.

In February 2010 Souvlakihut was ranked 3rd in leading Australian business publication BRW’s Fast Franchises list based on revenue growth (2008/2009) and first in terms of restaurant franchises. In 2009 the business was ranked 16th in BRW’s Fast Starters list based on revenue growth (2007/2008) and first in terms of restaurant businesses.


Consumer perception is that souvlakis are greasy take-away food, however Souvlakihut differentiates itself by producing fresh, healthy and natural products made with high quality, flame grilled meat, freshly prepared salad ingredients and authentic Greek seasonings.

Souvlakihut’s menu comprises a range of seven souvlakis under seven and a half grams of fat, including, Meatlovers, Hot & Spicy Chicken or Lamb, Traditional Chicken or Lamb, Vegetarian and Greek Chicken.

The company’s commitment to customer satisfaction is further demonstrated through an experienced, qualified chef who develops the menu for each store and is responsible for sourcing the freshest ingredients and creating a delicious combination of flavours.

Souvlakihut also believes in fostering franchisee relationships to facilitate strong growth.
